Ballantine Blended Scotch Whisky and its History

The lineage of Ballantine’s Scotch Whisky can be traced back to 1827, when a young 19-year-old George Ballantine, after apprenticing five years as a grocer, sets up a tiny grocery store in Edinburgh supplying a range of whiskies. Nine years later in 1836, George shifted his focus towards the art of ageing whiskies, using quality, hand-selected malts. Expanding operations, George also opened a bigger Ballentine’s shop with a new grocery store in South Bridge. Within half a century, Ballantine’s shops and warehouses export Ballantine’s blended whisky to a worldwide market. George Ballentine retires and his two sons take the reins of the family business in 1988.

Not long after, George Ballentine passes on. While his body shuffles off this mortal coil, his legacy lives on forever imprinted in the pages of history. The proof of which comes in 1895, when Ballantine’s was awarded a Royal Warrant by Her Late Majesty Queen Victoria. Talk about a royal seal of approval indeed.

1. Its Rich History

You might not believe this, but the world-renown Chivas Regal, originally named Chivas Brothers, was founded in 1801 by a pair of brothers who used to be grocers in Aberdeen, Scotland. But it wasn’t until the 1900s that the export market for whisky from Scotland soared. Business was abruptly disrupted by World War I, and just as business picked up thereafter, World War II began. The brothers passed away, and the brand eventually landed in the hands of Seagram, a Canadian whisky distiller in 1949.

With the global supply chain of Seagram, Chivas Regal was able to be exported to a total of 35 countries in 1960 and sell a total of 100 000 cases a year. Demand for the blended whisky rocketed, and the brand grew to sell 1.2 million cases of whisky a year by 1970.

The crowd favourite Chivas Regal 18 Year Old was then launched in 1997, and the brand was acquired by French alcoholic beverage company Pernod Ricard four years later. A full range of limited edition and market exclusives have been introduced since then, and the brand sells up to 4 million cases of whisky per year now.

Smooth and generous, a blend of the finest malt and grain whiskies matured for at least 12 years. Shake the rum, lime juice, and demerara sugar syrup with ice until well-chilled. After straining it into a chilled coupe, garnish it with a lime twist and enjoy! 

4. Eggnog

  • 12 eggs, separated
  • 3 cups of white sugar, divided
  • 16 ounces dark rum
  • 1 teaspoon ground nutmeg
  • 2 cups heavy whipping cream

To prepare, mix egg yolks, sugar, rum, and nutmeg to ‘cure’ overnight in your refrigerator. The next day, you can beat the egg whites and remaining sugar with an electric mixer until peaks form. Fold in the egg yolk mixture and in heavy cream. Pour into lidded jars, refrigerate and shake before serving. The Sailor Jerry Rum is perfect for this.  

5. Mai Tai

  • 45ml white rum

  • 15ml almond syrup
  • 50ml orange juice
  • 15ml dark rum
  • Pineapple slices

All You Need to Know About Macallan Scotch Whiskey

The Macallan Story

The Macallan Distillery had humble beginnings, and was founded in 1824 when then-owner Alexander Reid obtained the respective licenses after the 1823 Excise Act was passed. 45 years later, Reid sold the plant to James Stuart who began rebuilding the estate and expanding it. Macallan finally hit it big in 1892 when Roderick Kemp, a Victorian distilling magnate bought ownership of the label and passed it down from generation to generation. It wasn’t until 1996 that Highland Distillers, now known as Edrington, took over Macallan and exponentially grew the distillery till critical mass.

Originally starting out in a single wooden shed with two stills, Macallan now boasts two major stillhouses and a subterranean distillery that was launched in 2018. Their portfolio of products has also grown massively, with the brand’s flagship bottles being the 12 year and 18 year age statement single malt whiskies. Outside of that, Macallan has also experimented with American oak ex-sherry and ex-bourbon casks in their finishing process – a step away from the traditional flavors of Macallan. Boasting a lighter, and sweeter flavor profile than the usual Speyside whiskies, these innovations have helped draw in a younger target audience and reinvigorated appreciation for the Macallan brand.

In particular, the Macallan 12 year old Sherry Oak-Highland has drawn much adoration for its perfect balance of new versus old. New and returning fans of the Scottish whisky brand have praised its rich woody nose and dried fruity finish, with a full body that is undeniably traditional Macallan.

Know The Difference – Tequila VS Mezcal

Tequila. Just the word alone might dredge up repressed memories of shot glasses and unfortunate decisions. Yes, we’ve all been there – a night out in town and things get a little wild. Someone screams “let’s do shots!” and out comes a dozen reasons why you’re gonna be hungover tomorrow, complete with salt and lime.

The truth is, there is more to the noble spirits of South America than just being relegated to a party drink. Tequila and Mezcal are heavily rooted in Mexican culture, and these drinks have been rising in popularity across the world in recent years. Before we dive deeper, let’s square off what separates the two – mezcal refers to a distilled spirit made from any variety of the agave plant. Tequila, however, is made from a specific species of agave known as the blue agave plant. In a sense, all tequilas are mezcals but not all mezcals can be called tequila.

One critical reason why both these drinks have become so desired in the past decade is due to the significant increase in exports. Now more than ever, a greater number of consumers are getting their hands on quality mezcals and tequilas, and they honestly can’t get enough.

The Origins

Although the blanket term for mezcal is relatively large, there are still some very strict requirements before the drink can be regarded as “true mezcal”. 

Much like how true champagne can only be made in the Champagne region of France, or true prosciutto di Parma (parma ham) must be produced in the Province of Parma in Italy – true mezcal has to be distilled in one of the eight states of Mexico. 

As we also alluded to earlier, the core requirement of tequila is that it is produced from the blue agave plant. How it differs is that tequila has no regional condition and distilleries can even be located outside of Mexico. 

Another big difference between tequila and mezcal is also the way each is prepared prior to the fermentation and distillation process. In the case of tequila, the bulb of the blue agave is baked and juiced before being fermented with yeast in barrels. For mezcal, the raw agave is roasted in a pit filled with hot coals for two or three days, before being juiced and fermented. This process is key in imbuing mezcal with its signature smoky palette.

Often utilised because of its unique smokiness, mezcal has been taking centre stage as a new addition to classic cocktails in many bars and restaurants. These sticklers for quality and consistency also adore mezcal due to its small-batch organic production process.
