Founded in 2006 and first produced in Portland, Oregon, Aviation American Gin is known for its pure medley of botanical flavours. This brand of gin is also referred to as an “American dry gin” due to its less distinct juniper flavour as compared to most other gins.
The gin derived its name from a classic cocktail known as the Aviation. The Aviation originated in the early twentieth century and was traditionally made with gin, maraschino cherry liqueur, creme de Violette and lemon juice.
In 2018, actor Ryan Reynolds acquired a stake in the gin brand. Even though he eventually sold the brand in 2020, Ryan Reynolds remains the face of Aviation American Gin.
The Production Process
Step 1: Infusion
A precise blend of botanical ingredients – cardamom, coriander, French lavender, anise seed, sarsaparilla, juniper and two types of orange peel – are suspended in a pure, neutral grain spirit for 18 hours in macerating tanks.
Step 2: Distillation
The macerate is pumped into a still with pure water and heated by steam jackets, giving rise to vapours that enter the condenser. The condenser then cools the vapours to form the gin distillate.
Step 3: The Cut
The first fluid leaving the still, also known as the “heads”, is removed in this step. The “heart of the spirit” is collected throughout the process, which will take approximately 7 hours before distillers make the final cut, “the tails”. At the end of the process, the “heart cut” collected is 142 proof.
Step 4: Blending & Bottling
The “heart cut” is transferred to a blending tank where deionised Cascade mountain water is added, bringing the Aviation gin down to the desired 84 proof before bottling, capping and labelling.
